The reason these peanut butter cookies are gluten-free is because they actually contain no flour at all. Seems a bit weird, right? Well, I was skeptical at first, but these are so easy, fast and turned out so awesome that I’ve made 3 batches since my first last week. Plus, you most likely have all the ingredients to make them right now.
Preheat oven to 350°F.
Stir together the peanut butter and cane sugar in a large bowl. Whisk the egg, vanilla and baking powder in a separate, small bowl. Add the egg mix to the peanut butter and sugar and stir until completely blended. (I also added some chocolate chips to my second batch).
Drop dough by rounded 1 tbsp. 2 inches apart onto your prepared cookie sheet. Using a fork, press down and partially flatten each ball of dough and sprinkle with sugar. Bake for approximately 9 to 12 minutes. Let cool for 5 minutes and remove from cookie sheets.
